For cookie in a jar mix:

  • 1 1/4 cups all purpose flour
  • 1/2 cup rolled oats
  • 3/4 tsp baking soda
  • 1 tsp sea salt
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup chocolate chips
  • 1/2 cup small candies (such as M&Ms or mini peanut butter cups)

What to add to make the cookies:

  • 1 flax egg (1 TBS ground flaxseed + 3 TBS water), or one regular egg
  • 3/4 cup room-temperature butter (1 1/2 sticks), like Miyokos
  • 1 tsp vanilla extract

Instructions

  1. Begin by cleaning and drying a 32 oz jar. This is often a size of store-bought pasta sauce, so that’s what I used here. Begin layering in ingredients in the order they are listed; begin with flour, rolled oats, baking soda, sea salt, brown sugar, and granulated sugar. Use a spoon to pack each layer down as you go; this will result in the most even layers. Top jar off with chocolate candies of choice and tie with a ribbon.   2. To make the cookies, preheat the oven to 375 degrees F. and line two baking sheets with parchment or silicone mats. Blend 1 flax egg with 3/4 cup butter and 1 tsp vanilla extract in a stand mixer or with a hand mixer. Pour in cookie mix and beat to combine, until incorporated. Scoop out 1 TBS-sized cookies and space them evenly across the baking sheets. You will have around 25 cookies in total. 
  3. Bake cookies for 10-12 minutes, until browned on the edges and firm in the middle. Let cool on the baking sheets, where they will cook a bit more. Store cookies in a sealed container at room temperature for 5-7 days.
