Strawberry Rhubarb Margaritas are a perfect celebration of summer! They are made with an infused simple syrup, tequila, and some fresh orange juice.
Easily made nonalcoholic as well!
For the simple syrup:
– 3 cups sliced rhubarb
– 1/3 cup agave or maple syrup
– 1/2 cup sliced strawberries
– Pinch salt
For the margs:
– 2 oz orange juice
– 2 oz rhubarb syrup
– 1 1/2 oz tequila
– 1 oz orange liqueur
Make syrup by adding rhubarb, agave, strawberries, & salt to a pan over medium heat.
Add 1 cup of water and boil.
Simmer for 15 minutes.
Carefully pour mixture into a fine mesh strainer, collecting the syrup in a jar.
Reserve fruit pulp for use in another recipe.
Set jarred syrup aside.
To an ice-filled shaker, add orange juice, 2 oz rhubarb syrup, tequila, and liqueur.
Shake for 20 seconds.
Strain into a glass and garnish as desired.
