Easy Strawberry Shortcake

This recipe for Vegan Strawberry Shortcake is ready in 20 minutes! It’s a great spring/summer dessert  filled with fresh, berries & whipped cream.

Instructions

MAKE THIS RECIPE

Cups all purpose flour

Tsp baking powder + 1/2 tsp salt

Cups coconut oil, cold

Cups plain almond milk

TBS each maple syrup and sugar

Cups strawberries and whipped cream

Ingredients

Tsp each vanilla and lemon juice

Preheat oven

Take your flax  and add 3 TBS water in a bowl. Set aside. Preheat oven to 400 F,  line (or oil) a baking sheet

Mix dry ingredients

 In a large bowl, whisk flour, baking powder & salt. Mix your coconut oil into the flour until evenly combined. Set aside.

In the bowl with your flax "egg," add milk, lemon juice, maple syrup, & vanilla. Stir to combine. Pour into your large bowl and mix JUST until a dough forms.

Form and bake

Form 8 balls of dough and place them on the parchment-lined baking sheet. Sprinkle some sugar on top, if desired. Bake for 10-13 minutes

Serve with cream and berries!

While baking, mix chopped strawberries in a bowl with 2 TBS sugar. To serve, slice each shortcake  and fill with whipped cream & berries. Best enjoyed right away.
