Ingredients For Dough
– 3 cups all purpose flour– 1/2 tsp salt– 1 cup water– 1/2 neutral oil, like avocado
Ingredients For Filling
– 1 1/4 cup pumpkin puree– 1/4 cup cashew parmesan – 1/4 tsp salt– 1/2 tsp cinnamon– 1 TBS brown sugar– Vegan butter, to pan fry
Step One
Mix ingredients for dough rest for 30 minutes. Roll into a 1/45 inch sheet and punch into circles using a small cutter or glass.
Step Two
In a medium bowl, mix together pumpkin, parm, salt, cinnamon, nutmeg, and brown sugar. Add one TBS inside each circle of dough.
Step Three
Press together the edges of each pierogi. Boil each until it floats. Heat 1 TBS butter in a skillet and cook 4 minutes per side, until crispy!
