Edible Flower Shortbread

This recipe for Edible Flower Shortbread Cookies is show-stopping and simple! Made with just 5 ingredients, these vegan treats are festive and fun for any spring or summer occasion.


– 3/4 cup vegan butter – 1 1/4 cup all purpose flour – 1/3 cup + 2 TBS powdered sugar – 1/4 tsp salt – 1 cup edible flowers, like pansies

Beat butter for about 1 minute. Add in flour, sugar, salt, and extract if using. Beat until smooth and just combined,


Roll cookie dough into a  log 1-2 inches around. Freeze for 10 minutes. Remove and slice into 1/2 inch-wide coins.


Preheat the oven to 350 degrees F. Press one edible flower onto each cookie and place on a lined baking sheet. 


Bake for 12-14 minutes, let cool, and enjoy!
