For Simple Syrup: – 1/2 cup sugar – 1 cup water For slushie: – Simple Syrup (above) – 1/2 cup lime juice – 1/4 cup mint leaves – 2 tsp lime zest, optional – 1/3 cup light rum, or limeade for nonalcoholic – 6–7 cups ice
Make simple syrup by combining sugar and water in a small pot. Bring to a simmer for a few minutes, until sugar is dissolved. Alternatively, microwave the sugar and water for 2-3 minutes, stirring to dissolve. Let cool.
To a blender, add all of the simple syrup, lime juice, mint, lime zest if using, and rum (or limeade for nonalcoholic). Blend for 10 seconds.
Add the first three cups of ice and begin combining. Add the rest of the ice and blend fully until you have a thick slushie texture.
