Ingredients
– 3/4 cup extra virgin olive oil– 1/2 cup nondairy yogurt– 1 cup nondairy milk– 1 TBS vinegar– 1 cup organic sugar– 2 cups all purpose flour– 2 tsp baking powder– 1/2 tsp baking soda– 1 tsp salt
Step One
Preheat your oven to 350 degrees F. Line a deep 9-inch cake pan with a circle of parchment paper. Spray or drizzle with some olive oil.
Step Two
In a large bowl, mix together olive oil, yogurt milk, vinegar, lemon juice, and sugar. Set aside. In a smaller bowl, whisk flour, baking powder, baking soda, and salt.
Step Three
Carefully combine wet and dry ingredients, taking caution to not over mix. Your batter should be fairly thick.
Step Four
Pour batter into prepared cake tin and bake for 45 minutes. No crumbs should stick to the toothpick once inserted. Bake for 5-15 minutes more if needed.
