1cupchopped frozen pineapple
¼cupcanned coconut milk+ a few TBS cream from the top of the can (2 oz total)
Juice of one lime
2shots rum of choice2 oz total, or substitute with pineapple juice for virgin option
Pinchof saltoptional
Maple syrup and pineapple juice to sweeten if neededoptional
Mint and lime wedges for garnishingoptional
Instructions
In a high speed blender, combine pineapple, coconut milk, lime juice, rum, and salt.
Taste and adjust to your liking, adding more lime juice and salt as needed. If your pineapple is not very sweet, I recommend adding a bit of maple syrup or pineapple juice to sweeten.
Serve in cold glasses with garnishes of choice. Best consumed fresh.
