This time of year, I often eat soup multiple times a week. Especially after moving back to a chillier climate, it really feels the most nourishing. As someone who loves to maximize time when prepping meals, I love something that can be made as a large batch, and the typically tastes even better after sitting in the fridge overnight!

What factors make a vegan soup actually filling?

Beans and lentils are two go-to ingredients of mine to really ensure a soup is satiating. You’ll notice that many of the soups included here actually already include those. When they’re not featured, know you can almost always add them in (once the soup is mostly cooked) to add variety and plant-protein! White beans are a very versatile legume in this regard.

More Plant-Based Soup Tips

  • In summer months, soup can still be just as versatile. Lean towards water-heavy ingredients (like cucumbers or tomatoes) to ensure you have a refreshing and light final product.
  • In the winter, “heavier” ingredients are definitely more the vibe! Rely on things like root vegetables and beans to provide comfort and heft (like this miso soup).
  • When in doubt, a spritz of lemon juice or sprinkle of fresh herbs can really take a soup from meh to delicious territory.
  • Adding pasta can be tricky, as it tends to just absorb all liquid in the soup, so if this bothers you, feel free to store it separately! This chickpea orzo soup is one of my favorites and I do that sometimes.
  • Contrasting textures are really vital to feeling like you’re actually “eating” dinner (not drinking it). So be sure to incorporate things like crunchy items (toasted seeds/nuts, croutons, kale chip) or creamy toppings (like avocado, pesto, yogurt). I love loading up on both crunchy and creamy toppings in this pantry chili recipe!
