The grill is not just for meat! When vegetables spend some time over a fire, they develop a wonderfully charred flavor and many of their natural sugars caramelize. What veggies are best on the grill?

While many vegetables take well to the intense, smoky heat of a grill, zucchini, corn, bell peppers, and onions are some common winners. They require minimal prep and are practically foolproof.

What fruits can you grill?

Peaches, plums, pineapple, and watermelon are all excellent BBQ candidates. Their sugars intensify after the heat and they develop a nice, smoky quality. There are definitely some fruits to avoid when grilling (berries, for example, are much too small unless on a skewer).

Should you marinate vegetables before grilling?

No. Unlike many meat recipes, most of the time it’s better to marinate vegetables AFTER grilling, so they can soak up more flavor as they rest.

What is the best oil to use on a grill?

A high heat oil with a smoke point above 450 degrees F is your best bet when cooking over hot coals. Canola oil, avocado oil, peanut oil are good options.

Tips for Getting the Most Out of Grilling Plant-Based

  • Use a high heat, neutral oil. I like avocado! This will prevent excessive oil smoke, which can be bad for us.
  • Use long tongs if you do not have access to grill utensils. Things can get hot and you don’t want to accidentally burn yourself when flipping a potato.
  • When grilling a veggie burger, it can be helpful to use a piece of tinfoil underneath to ensure nothing falls through the grill grates. If you do not have foil, a better (and more sustainable) option would be a grill basket.
  • On this note, always be sure to cut large slices of your veggies (so skinny sweet potato fries do not slip right through.
