That’s right – pudding made from avocados! As hard as it is to believe, our favorite green fruit lends itself perfectly to a creamy, mousse-like dessert full of fudge-y flavor. By blending ripe avocado with maple syrup, cocoa powder, and a splash of milk, we’re able to easy whip up dessert in less than five minutes.

You really need to try it to see for yourself.

Ingredients Needed

One ripe avocado, medium-large in size

1/2 cup cocoa powder, Dutch process if possible, for a smoother flavor

1/3 cup pure maple syrup

5 TBS almond milk, unsweetened and plain (other nondairy milks work just as well, but I recommend anything unsweetened)

I prefer to use a food processor, but a high-speed blender would work as well. No chill time is required, so you literally can have a decadent dessert ready from start to finish in just 5 minutes.

Recipe FAQ

Does it taste like avocado?!

Surprisingly, it does not! This is because cocoa powder has a very strong base flavor, which can mimic the more mild notes of creamy avocado. The technique used when making boxed brownies with black beans employs a similar technique.

Can I freeze avocado chocolate pudding?

No. Freezing will alter the structure of the pudding too much and it will lose its mousse-like texture. It’s the same reason you sadly cannot freeze guacamole.

Can this be made in advance? How is it stored?

Yes! This recipe can be prepared three days ahead of time, if needed. It typically tastes freshest on Day 1, though. To store, place pudding in a sealed container in the fridge until ready to eat.

What equipment is needed?

A food processor is the best tool to use as it guarantees a smooth texture. If you do not have one, a blender can also work well.
